My favourite Guacamole recipe (vegan and gluten free)

3 ripe Avocados, halved and de-stoned (saving a stone)
1 large tomato or a handful of cherry tomatoes
A handful of Coriander, roughly chopped
Juice of 1 large lime
1 small finely chopped red onion
1 red chilli, deseeded and finely chopped (can use a green chilli if preferred)
1. Chop up the tomato and mash up slightly, then tip into a bowl.
2. Use a spoon to scoop out the flesh of the avocados into the bowl with the tomatoes.
3. Add the lime juice and the coriander to the bowl with the tomatoes and coriander, add the finely chopped onion and chilli. Season with salt and pepper. Mash or use a whisk to roughly mix it all together.
4. Serve straight away or if it is for later add the avocado stone you have saved cover the bowl in clingfilm or put into Tupperware and place in the fridge.
